You want to know how to make the best burger ever? Here it is:
Start with 80/20 ground beef (20% fat).
Form it into a massive patty, minimum of 1/3lbs, but preferably closer
to 1/2lb. It will get smaller when you cook it.
Season it with kosher salt, pepper, granulated garlic, cayenne pepper,
and worcestershire. I personally love garlic so I used a bit extra.
Throw the burger on a plate and into the freezer for about 10 minutes
so it will hold it's shape well while on the grill.
In the meantime you want to slice an onion about 1/8 of an inch thick.
Also throw some bacon in a pan to fry on medium heat. Start with the lid
on if you have a crappy ceramic cooktop like me. It will heat up the pan
faster.
You will need 1 slice of cheese. I used Swiss but cheddar would work
great as well.
10 minutes has passed. Your bacon has been flipped at least once. And
even though I didn't mention it earlier, your grill is now really hot.
Throw the burger on the grill in the hottest spot and put the slice
of onion on the side in a colder spot for indirect heat/grilling.
Keep an eye on your bacon because you want it barely crispy. Not chewy
and not burnt. Now run back outside and flip your burger as it's probably
got a nice sear on one side. Should only be like two minutes or so.
Wait another 2-3 minutes and flip the burger and throw your cheese
on top. By now your bacon should be done. Throw it on a paper towel
to soak up the excess grease. Then slice it in half. Go grab your burger
off the grill, throw it on a bun with some mustard, and put your grilled
onion and bacon on top.
